Here is a fantastic way to serve asparagus raw. No cooking required, just a sharp vegetable peeler to shave the asparagus into paper thin slices. So good for you.
Asparagus with Lemon Oil and Parmigiano Reggiano
This is a fantastic way to dress up asparagus as a side dish. Serve at room temperature for the best flavour. Buy the lemon oil at a specialty food store, or make your own by infusing extra virgin olive oil with lemon zest.
Beef and Farro Soup
One of our most popular soups at Olivea. It's an Italian version of Beef and Barley Soup using farro (spelt) in place of barley.
Burrata with Cherry Tomatoes and Chives
Burrata is a fresh mozzarella ball that is filled with cream and the remaining bits of mozzarella from the day's cheesemaking - a way to use up the leftovers - which is undoubtedly one of the world's most luscious cheeses! Serve it simply, with tomatoes, olive oil and salt. Add some fresh herbs, chilies or a little aged balsamic for zing.
Garlic Chili Oil
An amazing condiment to use in all your cooking. This is perfect on a simple pasta, or for adding to vegetables to give them a little extra flavour.
The grilled squid we serve at Olivea is one of the most popular antipasti on the menu. Simply grilled and served with aïoli and spicy red sauce, this dish is easy and delicious.
Olives al Forno
We serve a mixture of Italian, Spanish and French olives at the restaurant. Roasted with garlic, lemon zest and rosemary and served warm. The amazing aroma wafts through the dining room making everyone hungry!
This Tuscan bread salad is so full of flavour and speaks of Tuscany! Serve is on it's own as a salad or with roasted chicken for a fantastic meal.
You can make your own ricotta cheese at home. It is so simple! Use this ricotta, after draining, to make my Spinach Gnudi. Yum!
